Ahhhh...Fall. It's here - by calendar and by temperature...at least for today in Alabama. It could be 80 degrees tomorrow but today I'll be savoring the flavors of the season.
If you do not own a waffle maker, it is a must have! It seems like a waste of money because you can only make one thing on it but if you're anything like us, we use ours multiple times a week. Once you get hooked on homemade waffles, you'll turn your nose up at the expensive GF frozen varieties.
What you'll need:
1 1/2c. Pamela's Pancake and Baking Mix
This comes in a big bag at Kroger (or online) for about $16.
2 eggs
1 Tbsp coconut oil (or olive)
1-2 Tbsp ground cinnamon to taste
1/4 c. canned pumpkin
Moms: this is also a sneaky way to get some Vitamin A, Potassium and Vitamin C into your and your kids diets. Many stores are having sales right now so it's a great time to stock up. Look for organic pumpkin in a BPA free can.
1/2 - 1 c. all natural chocolate chips
3/4 - 1c. water
There is a recipe for waffles on the back of the Pamela's package (along with many other great ones!) but mine is slightly modified.
1. Heat your waffle iron. Add a little coconut oil to the iron first for better waffle release.
2. Combine all ingredients in a large bowl. Add you water last; you may need more or less depending on your consistency preference
3. Scoop 1/2c. of mix into your waffle maker
4. Shut the door, flip in a couple of minutes, and enjoy!
Love that you sneaked pumpkin in there! It's so easy to stock up on this time of year.
