No More Eggs Sticking to the Pan!

This is a subject that has frustrated me for years.  Yes, years.
I was incapable - until two days ago - of making eggs without making a mess.
I tried all kinds of pans - non-stick (the bad kind), non-stick (the "green" kind), and stainless steel.
I tried all kinds of greasers - non-stick spray (the bad kind), non-stick spray (the organic kind),  all the bad oils (canola, vegetable, corn), butter, and even coconut oil.  I even put water in the pan first and then added oil.  Nada.
Until the other day.
An epiphany, really.
A magical marriage happened and I will never have a stuck to the pan scrambled egg mess again.
Maybe some of you reading this already know the trick to all natural non-sticking scrambled eggs.  Well, I wish you would've told me.
So whether it's news to you or not, here's my magical marriage for happy, healthy breakfast eggs.
Start by heating your cast iron pan over high heat.
The heat is the trick here.  Think stir-fry.
Add about 1 tablespoon or more of refined coconut oil.  Read here why I love this oil so much!
Let the oil heat; the goal is for it to basically repel the eggs.  You should hear a nice "hiss" when you pour the eggs in.  If not, it's not hot enough...better luck next time ;).  You can also test this by flicking some water at the hot oil first and listening for the hiss.
Add the eggs, stirring frequently, and Voila!

Happy Egg Eatin'.
