I am a popcorn fanatic.
Growing up, my dad would send away for gourmet tins as presents and oh, did I love them.
But, enter Celiac Disease and the realization that for whatever the reason, there is gluten on everything...even food that is just supposed to be corn.
In addition to the gluten factor, we gave up all the junk that is typically included in your standard microwave popcorn (yes, even the good name brands unless it says 'all natural').
Even when I bought the 'good' microwave stuff, one bag could never feed our family.
Then we went home for Christmas and voila...
My mother-in-law made popcorn and out of it grew the easiest and best recipe ever...
and I don't think I'll ever eat microwave popcorn again :).
You'll need:
Large stock pot
1 c. popcorn kernels
olive or coconut oil
1/3c. melted butter or coconut oil
Your favorite popcorn seasoning
What to do:
*Over medium-high heat, pour enough oil to thinly coat the bottom of your pot
*Add 1 c. popcorn kernels in a single layer
*Cover your pot
*Pop until there's 3-5 seconds between pops. (Note: if you smell something burning, you've waited too long ;)).
*Tip the lid back towards you to let out steam. It is very important to tip the lid toward you so you are protected from kernels that may still pop and ricochet out at you.
*Stir the popcorn up with a silicone spatula to loosen it up
*Pour melted butter or oil over the top and stir well
*Sprinkle seasoning to taste and stir well
*If you happen to have leftovers, store in a gallon Ziploc baggie. This is a great snack to throw in the car.

Hi Cindy! I love making homemade popcorn. Try adding a bit of Bragg's Nutritional Yeast and a bit of Bragg's Sprinkle (both gluten free) and a dash of salt. SO YUMMY and MUCH better for you than the ick that they add to some of the Kernel's Seasons.

ReplyDeleteOh they make some great stuff and cool company! We use their Liquid Amino Acids in place of soy sauce and love it! We also love their Apple Cider Vinegar. If you go to their website and sign up, they send you a selection of samples.
